- Vaciamos el poolish en el volcán poco a poco hasta que tengamos una masa elástica y suave.
Comenzamos a agregar poco a poco el aceite de oliva.


- Boleamos la masa y la dejamos reposar hasta que doble su tamaño.
Ponchamos la masa, la colocamos en una superficie plana con harina y la aplanamos en un grosor de 1 cm con ayuda de un rodillo o botella de vidrio.


- La cortamos en rectángulos del tamaño de la raspa, la dejamos fermentar hasta que nuevamente doble su tamaño.
Los horneamos por 35 min.
