  11. 1 cda harina de maíz Minsa o Maseca
  12. pimiento morrón (puede ser de lata)
  13. 2 ramas Epazote

  1. Se puede preparar con el pollo en crudo pero yo prefiero cocerlo por separado y aprovechar a preparar un buen caldo.
    Teniendo el pollo ponemos un pedazo grande de unos 40 cm. de largo de papel aluminio y encima tenemos que poner la hoja de plátano, se cortan cuadros un poco más chicos que el papel aluminio, se les quita la nervadura central y se pasan por la flama para que se suavicen, tantos pedazos de hoja de plátano cuantas piezas de pollo vayamos a hacer.
  2. Preparamos la salsa: ponemos en la licuadora un pedazo de tableta de achiote como 1/4 parte de la pastilla para 4 piezas, añadimos un diente de ajo, un chorrito de vinagre, una pizca de orégano y sal o bien una cucharadita de consomé en polvo y una bolita de masa o una cucharada de harina de maíz Minsa o Maseca, ponemos un poco de agua y lo molemos perfectamente, lo vaciamos en una cacerola y dejamos que espese un poquito.
  3. Encima de la hoja de plátano colocamos una rebanada de cebolla, vamos tomando cada pieza de pollo y la mojamos en la salsa de achiote y la colocamos sobre la rebanada de cebolla, pelamos un jitomate y lo cortamos en rodajas y colocamos encima del pollo unas rebanadas, dos hojas de epazote, un poco de pimiento morrón, puede ser de lata, y un poco más de salsa y cerramos los paquetitos a que no se salga por ningún lado.
  4. Los ponemos en la vaporera a que todo quede bien unido. Una delicia.
