  1. Para las soletas, dividir las yemas y las claras.
    Una vez divididas hacer un merengue francés con las claras, agregar la mitad del azúcar hasta tener un turrón compacto.
  2. Aclarar las yemas con la otra mitad del azúcar, hasta el punto que estén blancas y voluminosas.
  3. Una vez listas las dos mezclas, agregar un poco de la harina, mover con un batidor y después agregar el merengue, integramos de manera envolvente, intercalamos secos con el merengue hasta homogenizar.
  4. Poner la mezcla en una manga y dar forma a las soletas en la charola.
    Una vez hechas llevar al horno a 180° por 15 minutos o hasta que se doren.
  5. Mientras se hornean las galletas, ponemos a hidratar nuestra grenetina con 80 ml de agua, acremamos nuestro queso crema y hacemos nuestro jarabe.
  6. Llevar los 100 gr de azúcar con 45 ml de agua en una sartén, en ese momento empezamos a batir nuestras yemas para que esponjen, cuando este burbujeando nuestro caramelo, meter una cuchara en el azúcar e inmediatamente meter en agua fría, si se pone chicloso es que ya esta.
  7. Vertemos nuestro jarabe a nuestra mezcla de yemas e incorporamos.
  8. Hidratamos nuestra grenetina a baño maría y la incorporamos a la mezcla de yemas, si se empieza a cuajar, podemos llevar nuestro bowl a baño maría y dejar que se empiece a hacer líquido.
  9. Agregar la crema batida a la mezcla de manera envolvente.
  10. Integramos la mezcla al queso crema de manera envolvente y batimos la crema Lyncott hasta que se formen picos suaves.
  11. Remojar las soletas en el jarabe e irlas poniendo en un molde con papel film o aluminio de base.
    Después agregamos la mezcla que hemos preparado y encima cocoa, volvemos a poner soletas y repetimos los pasos.
  12. Refrigeramos por 90 minutos y desmontamos.
  13. Decoramos como más nos guste y a disfrutar!
