- Batir la claras con la mitad del azúcar refinada hasta llegar al punto turrón.


- Batir las yemas con la mitad del azúcar refinada hasta banquear, debe verse con burbujas en la superficie y color ivory.


- Colocar la harina en forma de lluvia en las yemas ALTERNANDO CON LAS CLARAS. Es importante que sea de esta forma sino las yemas se convertirán en una pasta inservible.


- Colocar la mezcla en una manga con duya lisa y colocar tiras sobre papel estrella.


- Cernir azúcar glass sobre las soletas.
Hornear por 10 min a 180°C o hasta que estén ligeramente doradas.
- Jarabe de café
- Hervir el agua con el azúcar aproximadamente 10 minutos hasta tener un jarabe simple.
Sacar del fuego, enfriar un poco e incorporar en forma de pastita el café soluble al gusto.
- Hacer una pâte a bombe con las yemas y el azúcar. Incorporar el de poco en poco para evitar separar la mezcla. Agregar el vino Marsala moviendo bien para homogeneizar la preparación

- Hidratar la grenetina, reposar, derretir a baño María e incorporar en forma de hilo a la mezcla de queso previamente acremado. Batir la crema a medio punto e incorporar a la mezcla anterior. Ponerle un poco del jarabe de café.





- MONTAJE :Tomar como base las soletas y remojar con suficiente jarabe. Poner crema de Mascarpone y alisar con una espátula acodada. Continuar con las soletas hasta terminar. Refrigerar y una vez que esté gelificada la crema de Mascarpone. Al momento de presentar, retirar el aro y poner soletas alrededor. Si se desea, atar un listón y hacer un moño. Espolvorear con cocoa encima.
