- Tatemar los jitomates, la cebolla y el ajo. Mientras tanto hidratar los chiles en agua caliente. Quitarles las semillas y los cabitos.



- Licuar los chiles junto a los jitomates, la cebolla y el ajo. Agregar también todas las especias: orégano, tomillo, clavo, canela, comino. Colocar la carne en la mezcla y dejar marinar 1 hora. Luego colocar en la olla express y agregar 1 taza de agua o más de ser necesario para cubrir bien la carne. Agregar el laurel. Poner a cocer durante 30 a 45 minutos aproximadamente. Checar el punto de nuestra carne y de ser necesario cocer unos minutos más.



- Deshebrar la carne aún caliente. Mezclar con la salsa y cocinar unos minutos más en la estufa. Si durante la cocción se consumió mucho líquido puedes agregar más agua para que quede más como consomé en vez de salsa.
