- Primero haremos la crema de limón.
En una olla agregamos la mantequilla, el jugo de limón y la primera cantidad de azúcar al fuego hasta que la mantequilla se derrita.


- En un bowl aparte, batimos el huevo y la segunda cantidad de azúcar hasta que te ha una consistencia de punto de listón.



- Una vez que los huevos estén listos, vamos a templarlos con la mantequilla derretida, si dejar de revolver.


- Regresamos al fuego y cocinamos hasta que está espese. Y dejamos enfriar.



- Para el bizcocho, batimos a punto de listón las yemas con el azúcar glass y la cucharadita de vainilla.



- Cuando las yemas estén bien unificadas vamos a agregar la harina 1 con la sal, e integramos.


- Por otro lado haremos un merengue francés con las claras y el azúcar blanca. Mezclamos hasta que tenga un aspecto blanco y esponjoso.



- Es momento de juntar las dos mezclas. Ir agregando la mezcla de yema al merengue, alternando con la harina 2.


- Recuerda que debes hacerlo de forma envolvente



- Vaciamos la mezcla en una charola. Y hornear a 150° durante 15 a 20 min. Dejar enfriar 3 min.



- Desmoldamos en una trapo húmedo y podemos agregar un jarabe al bizcocho para humedecerlo un poco.


- Agregamos la crema de limón y exparcemoz con ayuda de una espátula.



- También podemos agregar un poco de crema batida o algún otro relleno que acompañe a la crema de limón.


- Es hora de enrollar. Con mucho cuidado tomar de los bordes y enrollar el bizcocho.



- Una vez enrollado podemos decorarlo con crema batida o un poco de azúcar glass. Ponte creativo y déjate llevar.
