- Empezaremos con la crema de lim贸n.
En una olla, colocar la mantequilla junto con el jugo de lim贸n y el az煤car blanco, llevarlo a punto de ebullici贸n.


- Mientras llega a punto de ebullici贸n, en una olla aparte batir el huevo y el az煤car blanca restante a punto de list贸n.



- Atemperar con la mezcla anterior una vez que est茅 hirviendo, de poco en poco hasta que tengan las mismas temperaturas y agregar la ralladura de lim贸n.



- Regresamos al fuego y cocinamos hasta espesar, reservar.



- Bizcocho.
Montar las yemas, agregar el az煤car glass de poco en poco. Cuando las yemas est茅n bien unificadas, agregar la harina suave marcada con el n煤mero 1 y batir hasta llegar a punto de list贸n.


- Con las claras y la otra cantidad de az煤car blanco, hacer un merengue franc茅s.



- Agregar un poco de merengue franc茅s y envolver con el mismo globo, alternar la harina con el merengue franc茅s y procurar terminar con el merengue franc茅s para mantener el aire en la mezcla. Agregar la vainilla



- Vaciar en una charola con papel estrella, aplanar con ayuda de una esp谩tula y horner a 180° durante 12 - 15 minutos aproximadamente.



- Si hay bordes, cortarla con un cuchillo para cuadrar. Desmoldar en un trapo h煤medo, untar nuestro relleno de crema de lim贸n y enrollar en forma de taco, amoldar una vez que este enrollada para un mejor acabado.



- Decorar al gusto.
