- Primero lavamos, pelamos y picamos las manzanas. En un sartén derretimos la mantequilla y agregamos la manzana picada junto con el azúcar. Dejamos que la manzana suelte su jugo y agregamos el jugo de limón, la esencia y las almendras así como la canela
Dejamos reducir por 5 minutos y agregamos 100 ml de agua. Dejamos que vuelva a hervir y agregamos la harina disuelta en el restante de agua, movemos hasta espesar y reservamos. - En lo que nuestra mermelada se enfría enharinamos nuestros moldes y encendemos el horno a 220°. Por otro lado, separamos claras de yemas y batimos las yemas con la mitad del azúcar y la vainilla hasta obtener una mezcla esponjosa y casi blanca. Batimos también las claras de huevo con el azúcar restante agregándola poco a poco en forma de lluvia. Sabrás que el merengue está listo si volteas el bowl sin qué este se caiga o deslice.
- Terminamos con la harina tamizada y con movimientos envolventes. Agregamos la mezcla a nuestros moldes y horneamos a 180° C por 55 min. En mi caso utilicé 2 moldes de 16 cm pero puedes usar uno de 22 cm.
- Mientras se hornea el bizcocho hacemos el jarabe. Lo único que vamos a hacer es mezclar todos los ingredientes del jarabe y llevarlos a ebullición por 5 minutos y listo. Ten cuidado pues la leche se llega a tirar muy fácil y muy rápido.
- Una vez horneado el pan, apagamos el horno y lo dejamos dentro por 10 minutos. Los sacamos y dejamos enfriar por 30 minutos. Con mucho cuidado cortamos en 2 cada bizcocho, lo empapamos con el jarabe y le ponemos la mermelada. Refrigeramos por 30 minutos.
- Montamos los bizcochos y comenzamos a decorar. El drip lo hice con azúcar glass, glitter, ron y colorante en gel. Tú puedes decorar como tú quieras.
