La quiche lorraine es un platillo originario de la región de Lorraine en Francia. Al principio el relleno solo se componía de huevos y crema de leche pero en el siglo XIX se le añadierón las pequeñas tiras de panceta.

- 250 gr panceta/tocino
- 4 huevos
- 300 ml crema
- c/n sal
- 50 gr mantequilla
- 150 gr cebolla
- 150 gr queso
- 5 gr pimienta
- 5 gr nuez moscada
- Para la masa:
- 250 gr harina
- 150 gr mantequilla
- 1.5 gr yema
- 5 gr sal

- Hacer el mise en place:
-Pesar y reservar los ingredientes.
-Filetear la cebolla.
-Cortar en cubos la panceta.
-Tamizar la harina.
-Rallar el queso

- Elaborar una masa brisée (colocar en un recipiente la harina, la yema de huevo, mantequilla y 5 gr de sal), mezclar en la batidora o a mano hasta obtener la masa. Cubrir y llevar a refrigeración.


- En una sartén colocar la mantequilla con la panceta, cuando comience a cocinarse agregar la cebolla fileteada, seguir cocinando hasta que la cebolla esté cocinada.



- Retirar del fuego y colocar el guiso en un bowl.



- Agregar la crema y los huevos.



- Agregar el queso, pimienta y nuez moscada, mezclar pertectamente todo rectificar de sal, si es necesario añadir y reservar.
- Estirar la masa en un molde llevar al horno durante 10 minutos a 200°c.

- Retairar del horno y agregar el relleno, llevar nuevamente al horno por 15 minutos a 180°c.



- Retirar del horno y disfrutar.
